Housed in the renovated historical building built in 1904 as Pearl's Administration Building, Chef Steve McHugh’s Cured makes use of the purest regional ingredients and is built on a foundation of lovingly hand-crafted cured foods, from charcuterie to pickles. McHugh, a seasoned chef from a small farm in Wisconsin, has an impressive culinary pedigree, yet his highest achievement of all has been defeating cancer. After such a life-changing triumph, he set out to open his own restaurant, endowing it with a name that speaks to his personal feat, as well as the artisanal cured meats hanging in view—a gritty glimpse of the epicurean pleasures ahead.
