Chef Sergio Remolina, a Mexico City native and former director of Latin cuisines at The Culinary Institute of America, San Antonio, puts the utmost care into selecting the ingredients for each item on Fletcher’s menu. The eponymous burgers start with his signature blend of short rib, chuck, and brisket, which are formed into thick patties that are cooked perfectly to order. The menu also includes hot dogs made from 100% organic Texas Akaushi beef, which, like the burgers, are served on brioche buns baked in Tribeca Ovens. Crispy chicken sandwiches, made with organic chicken from Red Bird Farms, are also available, and the ketchup, sodas, and milkshakes are all made with real sugar cane.
