Ingredients
- 1-2 bunches arugula or mixed greens
- 1 bag candied pecans
- 1 tablespooon red wine vinegar
- 3 tablespoons olive oil
- ½ straw wildflower honey
- (to taste) salt & pepper
Instructions
The arugula has a peppery bite to it which pairs wonderfully with the acidity of the vinaigrette. It’s the perfect salad for pairing with rich dishes or bowls of pasta.
Vinaigrette
Place all ingredients in a small jar. Seal the jar and shake vigorously, until emulsified. Add more salt and pepper if needed.
Salad
- Wash and dry arugula/greens.
- Place in a large salad bowl.
- Add chopped candied pecans.
- Dress with the red wine vinaigrette
