Three Six General is a butcher shop and local grocer specializing in cured and smoked meats. Everything they do at 36G is carefully crafted just like the good ol' days, and they're so proud to have a mostly female staff of friends and family who were all raised in Central Texas.

Owner Matti Bills has been in the local food industry since 2012, when she began working for local farms in Austin, Texas. Her first business spawned at the farmers’ markets in 2014, where she butchered whole hogs and sold derivative products such as bacon, ham, smoked meats, and other items like the famed pastrami that Texas Monthly named best in the state. After selling that business in 2019, she launched Three Six General. 36G operates at 7 area farmers markets’ from Austin to San Antonio and throughout the surrounding hill country.
