News: Newly Formed Hospitality Group La Unión Hospitality Announces First Project Coming to San Antonio’s Pearl in Late 2026

SAN ANTONIO, TX (July 16, 2026) – Chefs Rico Torres, Gabe Erales, and André Natera are delighted to announce a new partnership with the formation of La Unión Hospitality, a hospitality collective and restaurant management company from the acclaimed chefs and longtime friends. La Unión’s first project will be Rosso, an Italian steakhouse coming to Pearl in late 2026. Rosso will be located at 306 Pearl Parkway, Unit 101, San Antonio, TX 78215.

An ode to classic “red sauce” Italian restaurants, Rosso will spotlight authentic pasta dishes, showpiece steaks, and shareable steakhouse sides with Italian influence. Familiar but elegant, Rosso will offer a high level of service and an atmosphere ideal for many occasions, from a post-work aperitivo, to special celebratory dining, to a weeknight dinner at the bar. As the first concept from La Unión Hospitality, Rosso is setting the stage for what diners can expect from the partners: quality, elegance, approachability, and a refined level of warm and genuine hospitality.

“We’ve known each other for over a decade, and this partnership was born out of an authentic friendship and deep respect for the hospitality industry,” said La Unión Hospitality partners Torres, Erales, and Natera. “We’re honored to join the community at Pearl, an iconic destination we’ve long admired, and we look forward to serving the San Antonio community together with Rosso, a tribute to the Italian-American cuisine and nostalgic dining we’ve always loved.”  

The La Unión Hospitality partners—Torres (co-owner of MICHELIN-starred Mixtli), Erales (winner of Top Chef season 18), andNatera (two-time Dallas Morning News “Best Chef” recipient and host of the globally ranked Chef’s PSA podcast)—will be the operators of Rosso; an Executive Chef for the concept will be announced at a later date. The project’s team also includes Gensler for architecture and design.

“It’s not often that three chefs this decorated choose to build something together instead of separately,” said Ryan Howard, managing director of Potluck. “That fact alone speaks as much about who they are as people as it does about the food. Rosso will carry this iconic building’s history into its next chapter, and we’re thrilled to be the front door for La Unión Hospitality’s debut restaurant.”
