HOURS
The Bottling Department is open from 11 a.m. to 8 p.m. Sunday through Thursday and 11 a.m. to 9 p.m. on Friday and Saturday. It is open for takeout or patio seating only and masks are required to enter the building.
SAFETY MEASURES
To ensure that our community remains as safe as possible, the following pledge is in place:
Restaurants at Pearl
-Train our employees on disinfection, hygiene, and respiratory etiquette
-Limit occupancy and post maximum occupancy
-Maintain at least six feet distance between parties, including those waiting to be seated
-Make hand sanitizer/wipes available to employees and customers
-Wash or sanitize our hands upon entering the restaurant, and between interactions with customers
-Refrain from leaving condiments, silverware, flatware, glassware, or other traditional tabletop items on an unoccupied table
-Only provide condiments upon request, and in single use (non-reusable) portions
-Use disposable menus that are new for each patron
-Prescreen the health of our employees; send anyone home who is sick
-Clean and disinfect common areas and surfaces regularly; clean and disinfect each dining area after every use
-Require all employees to wear masks
-Post the Pearl Pledge at our entrances and display readily visible signage to remind everyone of best hygiene practices

Our Mission
Our mission starts with food. Food brings us together, it helps us tell stories about who we are and where we come from. We like to think of Bottling Department as a place where this can unfold, and where collaboration is fostered between farmers, ranchers, chefs and people who simply love food. As such, our mission is about providing a space for emerging chefs to hone their craft and where affordable options from the local culinary community are available for all.
Culinary Commitment
Bottling Department is committed to supporting the growing San Antonio culinary community and working with area vendors who source fresh, local ingredients. Our goal is to provide a space for these chefs and their ideas to come together, as well as an accessible location for food lovers to come and enjoy the food they create. In doing so, we will build on San Antonio’s reputation as a destination where food lovers can discover new tastes and flavors from around the world.
Our History
Bottling Department's food hall is built on the original site of the brewery’s bottling department, which turned out beer bottles even before the Pearl name was adopted in 1886. Beer was bottled there until 1999 and the brewery shut its doors in 2001. In 2004, a fire destroyed the building, the corner stones and stone name plate were salvaged and the original design acted as inspiration for the new building. Today, Bottling Department upholds the Pearl tradition by serving as a location for the next generation of quality culinary experiences and products.

Bud’s Southern Rotisserie
New Orleans transplant Pieter Sypesteyn, a veteran of Andrew Weissman’s Le Reve on the Riverwalk, returns to his Louisiana roots with this casual southern comfort concept built on tender rotisserie chicken and slow-cooked pork. It’s hard to think of a better meal than perfectly cooked chicken — deliciously seasoned, golden brown skin, tender meat that pulls apart effortlessly and the beautiful aromatic fat that drips down onto slow-roasted potatoes. This is real deal southern comfort food! Don’t miss out on the traditional Louisiana sides such as jambalaya, mac n' cheese and braised greens as well as whole chickens and family-sized portions of pork for takeout and catering.

Fletcher's Hamburgers
With a unique patty made from Chef Sergio Remolina’s signature blend of short rib, chuck and brisket, Fletcher’s serves up a hamburger made for hamburger lovers. Match that with the burger du jour, made from 100% Texas grass-fed beef, and you’re in burger heaven. If burgers aren’t your thing, the menu also includes hot dog sausages made from 100% organic Texas Akaushi beef, which, like the burgers, are served on brioche buns baked in Tribeca Ovens. Crispy chicken sandwiches, made with organic chicken from Red Bird Farms are also available, and the ketchup, sodas and milkshakes are all made with real sugar cane.

Tenko Ramen
The menu at Tenko Ramen is focused on ramen and a handful of small Japanese accompaniments, but it doesn’t stop there. Diners can look forward to dishes such as a spicy miso tantan-men and chicken fajita karaage with yuzu sweet and sour sauce. The restaurant is local chef Quealy Watson’s first fast casual concept debut after working as the executive chef at Hot Joy, and serving as the original chef of The Monterey. His partner, Jennifer Dobbertin has over a decade of experience in hospitality services, and has been a small business owner in San Antonio where she gained deep knowledge both in the kitchen and front of house.

Mi Roti builds inspiration from the West Indies and the Caribbean and is the Bottling Dept.'s newest concept. Brought to us by Chef Nicola Blaque (the force behind the critically-acclaimed Jerk Shack) and Chef Lionel “Butch” Blache, the team shares their love for Caribbean street foods with San Antonio.

Chilaquil
Husband-and-wife team Orlando and Susana Aguirre, both originally from Mexico, move their popular food truck operations to their first brick-and-mortar location at the Bottling Department. Chilaquil focuses on traditional Mexican street food and features its namesake chilaquiles, a comfort food classic consisting of tortilla chips covered in salsa, cheese, and other toppings. The menu also includes other Mexican staples such as tacos, tortas, and quesadillas.
