New Orleans transplant Pieter Sypesteyn returns to his roots with Bud’s Southern Rotisserie, a southern comfort food concept with a soul that’s deep in the heart of Louisiana. For this southern boy, it’s hard to think of a better meal than perfectly cooked chicken, which is what led Chef Pieter and his wife, Susan Sypesteyn, to open Bud's in July 2017. Come for deliciously seasoned chicken with golden brown skin and tender meat that pulls apart effortlessly, as well as slow-cooked pork and traditional Louisiana sides such as jambalaya, mac n' cheese, and braised greens.

“New Orleans transplant Pieter Sypesteyn takes on Louisiana comfort food with a two-meat concept: slow-cooked porchetta (boneless pork roast) or tender rotisserie chicken, served as a sandwich or on a plate, with your choice of sides, among them yams, cornbread, and slaw. Our porchetta plate was all we could want from a pig, but the sides stole the show: garlicky collards (and we do mean garlic, cooked to tender sweetness), candied sweet potatoes that wouldn’t be out of place on a dessert menu, and Cajun cornbread we had to know more about.”
