
Already in their sixth week of classes, gastronomy students of The Culinary Institute of America, San Antonio, Texas saw firsthand where their food comes from. Instructor Chef Elizabeth Johnson arranged visits on March 21st to three local farmers, all of them vendors at Pearl Farmers Market: Peeler Farms, South Texas Heritage Pork, and My Father’s Farm.
Students met with each farmer, were given tours of the farms and taught about the farms’ products. The Escobedo family, owners of South Texas Heritage Pork, even provided a taste of their smoked pork sausage.
In response to the students’ visit, Marianna Peeler of Peeler Farms states, “Glad the world has people who will cook what I grow!” The farm visits by The Culinary Institute of America students are the first step in making them aware of what products can be locally sourced and who is behind the farming practices.
